Most of the recipes out there for Margarita Chicken include bottled margarita mix. Why?  I suppose it seems like a time-saver, but since we don’t use the stuff to make our margaritas in this house, I definitely wasn’t going to use it in my marinade.

To me, those bottled mixes impart a “chemical” taste and that’s not what I was after here. I wanted clean, fresh flavor and my friends, that is precisely what you’ll get by going with the fresh, simple ingredients that I’ve used here. Since we think it is vitally important to keep a good stock of margarita ingredients on hand at all times, I can pretty much throw this recipe together on a whim.

 Sometimes it is the simplest of recipes that we tend to forget when menu planning. Tortilla pinwheels are one of those simple, no-brainer recipes that should be in the front of your mind when planning a party or gathering of any kind. They meet all of my criteria for keeping things low-stress – they include simple ingredients, they’re quick and easy to put together, and they’re made ahead with very little prep at party time. This gives them a solid place on my “awesome party snack” list.

They are also easy to transport, look oh-so-pretty on a plate, require no utensils, and people love ’em.  Need I say more?

To add a Southwest twist you’ll need a can of Ro-Tel Diced Tomatoes & Green Chiles. These come in a hot version as well but I find when serving a group, it’s best to go mild.

As we head into the last long weekend of summer, I thought it was time to share this sunny salsa with you all.  It’s pretty much the perfect appetizer to bid summer a fond farewell whatever your plans may be. If you’re hosting or attending a gathering, it’ll go over in a big way. If you’re just hanging out and taking a few days to relax and unwind, it would be an excellent idea to mix up a batch to keep in the fridge for snacking all weekend long.

When planning which appetizers to make for a gathering, my mind tends to go immediately to those the gooey, cheesy recipes – my mind likes to go there. Recipes like Cheesy Artichoke Dip (yum) or Warm Cheesy Bean Dip (help me) are always a delicious choice. But, as I was cruising through the produce department on a recent trip to my second home, the grocery store, it struck me that I should take advantage of the gorgeous summer produce that we come to take for granted… until it’s gone. Mango Corn Salsa with Black Beans

The decision was sound. This salsa has officially joined my list of favorite appetizers. The fact that it is incredibly good for you is a wonderful bonus, but the reason it’s made the list is because it is so gosh darn tasty. And, it’s more than just an appetizer, I could literally eat it with a spoon. Try serving it with grilled chicken or fish for a healthy, delicious dinner.

A delicious blend of chicken, spices, beans, and peppers come together to make a hearty chili that will warm you up from the inside out.

If you are a fan of chili and have not yet tried White Chicken Chili, you must!

Although this chili is not technically white, it is softer and lighter in color than a traditional tomato based chili. My recipe is a bit richer in color than most and has a nice, creamy texture which is a requirement for chili in my book.

So, what makes White Chicken Chili different than traditional chili? Most obviously, we are using chicken in place of beef. In addition, there are no tomato products of any type and instead, it includes a deliciously seasoned chicken broth base. And, finally, white chili should include only white or lighter colored beans, so leave the red kidney and black beans in the pantry. Peppers are an integral component of the flavor but if you are sensitive to heat, you can easily control the spice level and I’m gonna tell you how!

I’d like to introduce you to my beautiful friend. She’s quite the colorful character – all dressed in red, and ready to party.

This recipe is a Mexican-inspired version of the classic stuffed bell peppers I grew up on. I have a tendency to throw a Mexican twist on nearly every recipe eventually and this time around it was Mom’s stuffed bell peppers. I’ve taken her base recipe and jazzed it up by adding my own Homemade Taco Seasoning, black beans, and corn.  This recipe is full of fiber and good nutrition and I’m even going to tell you how you can lighten it up so I’m not responsible for making you break a New Year’s resolution.

Do you have plans for Super Bowl this year?

Although the poor 49ers just weren’t up to par this season (I really don’t want to talk about it), the Super Bowl is being hosted at their home, Levi’s Stadium, a mere 15 minute drive from our house. So, even though our team didn’t get anywhere close to participating this year, we’ve been experiencing the Super Bowl hype up close and personal and you just can’t help but get drawn in!

I’m actually excited about the matchup this year and we’ll definitely be watching. And, besides, we have the Warriors and I think there’s some sort of karma balance happening here. I mean, the Warriors are downright magical and it would be a bit greedy of us to expect to our football team to be in the Super Bowl too, now wouldn’t it? My husband says no, but…

I love this recipe for the following reasons:

A. It’s a make-ahead recipe – golden! The flavor will improve as it chills so make it at least 4 or more hours in advance – or even better, the day before.

B. It takes less than 5 minutes to put together.

C. It’s creamy and delicious.

D. It can easily be lightened up without losing any quality and is delicious served with veggies.

It is a good day when we get to talk about enchiladas. Wouldn’t you agree?

I finally got around to snapping some photos of the process for making this tasty recipe so I could share it with you all. These enchiladas were heavily requested by my boys through their high school years and thankfully with the help of my trusty slow cooker, they are quite easy to make. It’s kind of a drag when you’ve got one kid that decides that his most favorite meal in life is your not-exactly-fast-and-easy Beef Stroganoff. I’m not naming names (Boy #4). Ha! But seriously, he’s right. That stroganoff is very good and you should try it.

I’ve made a variety of different enchilada recipes over the years but this is the simplest of them all so it’s the one I’m sharing with you first. I guarantee it will not be the last. We love our Mexican food around these parts!

I like to warm up some refried or pinto beans and cook up a batch of my Restaurant Style Mexican Rice to make it a complete meal. I honestly don’t think it gets much better than this.

We aren’t used to big weather here in Northern California but we’re getting a serious dose of it right now. After years of drought all of our prayers for rain have been answered – in a very, very big way. My thoughts go out to the over 200,000 people forced from their homes in the Oroville area and anyone who has experienced loss in these damaging storms.

You may have figured out by now that we kinda like Mexican food around here. For me it is the ultimate comfort food, but it goes a little deeper than that.

Way back in time, when it was just Paul and I, back before we had kids, a mortgage, college loans, and dependable cars, we almost always chose Mexican when we ate out. As a matter of fact, my marriage proposal took place in a Mexican restaurant (fancy!).

This tender and deliciously seasoned Shredded Mexican Beef can be used in a variety of Mexican-inspired dishes. It is super versatile and so easy to make!

It was 1983, a time of big hair, big shoulder pads and countless other horrible fashion choices (what were we thinking ladies???). It was my 21st birthday and we were out for a casual dinner by ourselves. I had no idea it was coming until the moment the waiter set my salad plate down in front of me and I saw the small, square box sitting on the plate.

There are certain cuts of meat that I hold a special fondness for and pork tenderloin is one of them. It’s super versatile and incredibly lean, but cooks up perfectly tender using a variety of cooking techniques.

If you have the right recipe, you can yield a wonderful result in your slow cooker with lean meats like pork tenderloin and this recipe is the perfect example.

And, let’s talk about beans for a minute. They are nutrient-rich, low in fat, full of soluble fiber, make you feel full and satisfied, and they’re an inexpensive source of protein. This gives us an excellent excuse to include them in as many meals as we can!

Well, here we are just weeks away from Christmas and I’m talking about meatloaf today.

What does this recipe have to do with Christmas? Nothin’!  But, it’s been chilly outside and when I’m cold my mind and my appetite turn towards comforting meals like this one.

Big, bold, and flavorful, this Tex-Mex Cheese Stuffed Meatloaf with Smoky Chili Glaze will satisfy the heartiest of appetites!

There is a lot going on with this meatloaf.  

It starts with the typical mixture of ground beef and pork but then it takes a Tex-Mex fork in the road with the addition of chili sauce, onion, red bell pepper, diced green chilis, corn, and a bevy of seasonings to drive home the point.

Then, of course, I had to stuff it with shredded pepper Jack cheese and top it off with a tangy, smoky glaze.

Here’s how it comes together.

Big, bold, and flavorful, this Tex-Mex Cheese Stuffed Meatloaf with Smoky Chili Glaze will satisfy the heartiest of appetites!

Half of the meat mixture is placed in a baking dish that has been coated with non-stick cooking spray. I pressed it into a football shape and formed a well in the center.

I filled the center with shredded pepper Jack cheese.

Then, the other half of the meat mixture is molded down over the top, sealing the cheese inside.

A two ingredient Smoky Chili Glaze is spread over the top towards the end of the baking time.

It’s a moist, tender meatloaf that would be wonderful served over a mound of mashed potatoes. This time around I served it with a mixture of roasted baby Yukon gold potatoes and sweet potatoes.

I highly recommend serving the leftovers on toasted hoagie rolls with more pepper Jack cheese melted over the top.

Tex-Mex Cheese Stuffed Meatloaf with Smoky Chili Glaze

 

Meatloaf

  • 2 pounds ground beef
  • 1/2 pound ground bulk pork sausage (like Jimmy Deen's Regular)
  • 1/2 cup chili sauce
  • 1/4 cup water
  • 3/4 cup rolled oats
  • 1 egg (lightly beaten)
  • 1 4 ounce can mild diced green chilis, drained
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon fresh ground black pepper
  • 1 cup diced red bell pepper
  • 1 cup diced white or yellow onion
  • 1 cup frozen corn kernels (defrosted)
  • 1 1/2 cups shredded pepper jack cheese

Smoky Chili Glaze

  • 1/4 cup chili sauce
  • 1/2 teaspoon smoked paprika
  1. Preheat the oven to 350 degrees F. Coat the bottom of a 13″ x 9″ or similar sized baking dish with non-stick cooking spray.
  2. In a large mixing bowl, combine 1/2 cup of chili sauce with the water. Add the oats, egg, diced green chilis, Worcestershire, chili powder, cumin, garlic powder, oregano, and black pepper. Mix well. Add the ground beef, ground pork, bell pepper, onion and corn and mix well. Use your hands to work the mixture until all the ingredients are completely incorporated.
  3. Divide the meat mixture in half. Lay half the meat mixture in the prepared baking dish, forming into a football shape. Create a shallow well so that the edges are higher than the center. Layer shredded cheese on top of the meat along the center, staying about 1/2 inch away from the edges. Cover completely with the 2nd half of the meat mixture forming a domed top and sealing the edges. Bake, uncovered, for 50 minutes.
  4. Meanwhile, combine 1/4 cup chili sauce with smoked paprika in a measuring cup or small bowl. After initial baking time, pull baking dish out of the oven and carefully spoon out and discard the excess grease from the dish. Spread the glaze over the top of the meatloaf and return to the oven to bake about 15 minutes longer, or until a meat thermometer inserted in the center of the meatloaf registers 165 degrees F. Allow the meatloaf to stand for 5-10 minutes before slicing.

Feel free to omit the ground pork and use 2 1/2 pounds ground beef.

Chili sauce has a zesty, vinegary kick and can be found in the condiment section of your grocery store. For a milder flavor you can substitute plain tomato sauce.

After browning 2 pounds of lean ground beef, this is literally a dump everything in the slow cooker and walk away recipe.

Transfer the browned beef to the slow cooker along with some diced onion, a can of diced green chiles, tomato sauce, a little beef broth, chili powder, cumin, oregano, and black pepper. Stir in a full container of Fresh Cravings Chunky Salsa. I went with medium for a mildly spicy chili but you could use the mild variety if you prefer.

Stir to combine and then cover and cook on LOW for 5 to 6 hours to let those wonderful flavors intensify.

A can each of kidney beans and pinto beans are added during the last 30 minutes of the cooking time. I always add canned beans towards the end in slow cooker recipes because it ensures they’ll have a nice bite and won’t get mealy or mushy from over-cooking.

Serve it with your toppings of choice but I highly recommend a little sour cream and avocado. The avocado was absolutely delicious with the flavors in this recipe.

Slow Cooker Salsa Chili

  • 2 pounds lean ground beef
  • 2 16 ounce cans tomato sauce
  • 1 16 ounce container Fresh Cravings Chunky Salsa (Mild or Medium Crave)
  • 1 4 ounce can diced green chiles, drained
  • 1/2 cup beef broth
  • 1/2 cup diced white or yellow onion
  • 2 tablespoons chili powder
  • 1  teaspoon ground cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon fresh ground black pepper
  • 1 15 ounce can kidney beans, rinsed and drained
  • 1 15 ounce can pinto beans, rinsed and drained
  • Optional toppings: shredded cheese (sour cream, avocado, thinly sliced green onion, cilantro)
  1. Place a large deep skillet over MEDIUM-HIGH heat, add beef and cook, stirring to break up, until beef has browned. Drain grease and transfer the cooked ground beef to a 6 quart slow cooker. Add tomato sauce, Fresh Cravings Chunky Salsa, diced green chiles, beef broth, onion, chili powder, cumin, oregano,  and pepper. Stir mixture, cover with lid and cook on LOW for 5 to 6 hours.
  2. After initial cooking time, stir in beans, cover and continue to cook on LOW for an additional 30 minutes.
  3. Serve with any or all of the optional toppings.
  4. Also delicious spooned over tortilla chips, baked potatoes, rice, or cornbread.
